Herbed Garlic Confit (2 Recipes in 1)
Self Made ModernHerbed Garlic Confit is an easy to make and highly versatile recipe. It makes both a wonderful flavored garlic that can be used on everything from garlic bread to stews. It also makes an incredible infused oil that can be used to make salad dressings and a flavored oil for everyday dishes. It only takes a little bit of prep and some patience.

- 8-16 Oz Fresh Garlic Pre peeled or bulb is fine
- 8-16 Oz Olive Oil Regular olive oil will taste more neutral. EVOO will impart more of the flavors of the oil to the recipe, which you may or may not want.
- 2-3 Sprigs Fresh Herbs Any you like will do. Dried herbs will work but will leave bits of herb in your food.
Put garlic in an oven safe dish.
Put in Fresh Herbs.
Cover with Olive Oil.
Bake at 225° for 1½ hours. Check after 1 hour to see if it’s done. Garlic should be very soft but not fall apart.
Once it cools remove the herbs. You MUST store in an airtight container in the refrigerator. Make sure the oil completely covers the garlic.
1) You will notice a large difference in the amount of garlic listed. The quantity of this recipe is simply 1:1 so if you have a small amount of garlic it can still be made. If you wish to make a large batch you can do that as well. The most important thing is that the oil covers the garlic while cooking. If it doesn’t have quite enough, add a little more. 2) This MUST be stored in the refrigerator covered in oil. 3) The prep time for this is if you use pre-peeled garlic.
